Cornbread (Custom)
Ingredients
1 c melted butter
1 ¼ c white sugar
¼ c cream (whole milk is OK)
4 eggs
1 can corn and peppers (drained)
8 slices canned/pickled jalapeno pepper (minced)
1 ½ c shredded cheese (suggest mix of Kojak and Colby)
1 c all purpose flour
1 c yellow cornmeal
4 t baking powder
½ t red pepper flakes (omit if you don’t like things too spicy)
¼ t salt
Directions

Preheat oven to 300.

Lightly grease a 9x13 pan.

In a large bowl beat together butter and sugar.

Add cream (or milk).

Beat in eggs, one at a time.

Stir in corn and peppers and jalapeno pepper.

Stir in cheese.

In a separate bowl, mix together flour, corn meal, red pepper, baking powder and salt.

Add flour mixture to corn mixture. Stir until smooth.

Lightly spray pan with cooking spray.

Pour batter in pan.

Bake for approximately 1 hour, until a toothpick inserted in the center comes out clean.
